Like other native apps that lack the Dynamic Color theme, Google Maps currently uses a blue accent for buttons and other UI elements, but it looks like it's changing to turquoise.
Update 12/12: That turquoise accent is now appearing in iOS (version 24.49.3), and the “Google Maps has a new look” tooltip explains that it's “the same great app, now with fresher colors.” The fact that Google needed to type a message for this change is interesting.
Update 12/10: The teal accent color is being used more extensively in Google Maps for Android. You can see that the blue color has been removed from the FAB (floating action button), while the accent color for the currently selected tab has also changed. The text label has become black.
Old vs. New
As with the FAB, a darker teal is used in the directions carousels, while everything else uses a lighter shade.
In Listings, Google has also updated the blue icons throughout. After a force stop of Google Maps (from the app info), we see it in version 24.49.06.x (stable + beta).
Original 11/13: Users are starting to see a teal accent color applied to the bottom bar of Google Maps and icons like directions and location. Recent screenshots from Google Maps ads have shown off the new hue.
The teal accent is also very noticeable when browsing lists, with updated Directions, Start, and other carousel buttons.

Old vs. New
It's unclear why Google chose this more muted color, which doesn't quite fit with the company's usual palette of blue, red, yellow, and (bright) green. We've reached out to the company for more information. In the meantime, Google Maps still doesn't support Dynamic Color on Android.
This server-side change hasn't yet rolled out widely on Android or iOS, and follows an updated color palette for the map layer introduced around this time last year.
It follows other recent design changes, such as moving the corner weather widget to the bottom sheet, as well as a simplified bottom panel with just three tabs.
